SWEET POTATO PIE

2 cup mashed cooked sweet potaotes
2 eggs, separated 
1/4 tsp. salt
1/2 tsp. ground nutmeg
1/2 cup milk
1 unbaked (9-in) pastry shell
1/2 cup butter or marg., softened
1 cup firmly packed brn. sugar
1/2 tsp. ground cinnamon
1/2 tsp. ground ginger
1/4 cup sugar
1 unbaked (9-in) pastry shell

Combine sweet potatoes, butter, egg yolks, brn. sugar, salt & spices. 
Stir in milk, and mix well.  Beat egg whites (at room temp.) at high speed
of an electric mixer 1 minute.  Gradually add 1/4 cup sugar, 1 tbs. at a
time, beating until stiff peaks form.  Fold egg whites into sweet potato
mixture.  Spoon mixture into unbaked pastry shell.  Bake at 400F for 10
min.; reduce heat to 350F, and bake an additional 45 min. or until set. 
Yield: 1 9-in. pie.

Sweet Potato Pie

Recipe is from Biscuits, Spoon-Bread and Sweet Potato Pie by Bill Neal:

3/4 cup lightly packed light brown sugar
1/2 tsp. salt
1 tsp. cinnamon
1/2 tsp. nutmeg
2 Tbsp molasses
1 1/2 cup mashed cooked sweet potatoes         
2/3 cup half and half
2 eggs, separated               
6 Tbsp dry sherry
1 partially baked 9" pie shell

Mix sugar, salt, cinnamon and nutmeg. Add molasses and sweet potatoes; 
beat well. Stir in half and half, egg yolks, and sherry. Beat the whites
till stiff, fold in, and pour into partially baked pie shell.  Put in a
preheated 425 degree oven. Reduce heat to 375 and bake about 35 min.,
until pie is browned and set in the middle. Serve warm or cold with
whipped cream.

Lucille's Sweet Potato Pie

6 medium Sweet potatoes   (use the rounder ones)
3 sticks of butter
1.5 cup sugar  (2 cups if you want)
3 eggs  ( beaten)
1  tsp cinnamon
1  tsp allspice
1/4 tsp salt    

2 -  9" pie crusts

Boil sweet potatoes in their jackets until cooked.  - thin knife goes
through.  Beat the eggs.  Put butter & sugar in a large bowl.  Peel hot
potatoes - with knife cut top and peel down, removing any stringiness from
the potato with the skin, cut bottoms.  Place hot peeled potatoes on the
butter in the bowl with sugar, CRUSH together.  Add beaten eggs.  Stir in
spices ( to taste). 

Pour into two unbaked pie crusts.     ( consistency of pumpkin pie mix)
Bake at 350F until brown

GREAT-GRANDMA

1 1/2 C mashed cooked sweet potatoes	Unbaked pie shell	
1/2 C sugar	1/2 t salt	1/2 t ground nutmeg
1 t ground cinnamon	1/4 t ground cloves	2 eggs, well beaten
1/2 t vanilla	1 C hot milk	1/4 C butter	
Preheat oven to 450o.  Combine potatoes, sugar, salt, nutmeg, cinnamon, cloves, eggs, and vanilla.  Melt butter in the milk and stir into the potato mixture.  Beat until smooth.  Turn into the pie shell.  Bake 10 minutes.  Reduce heat to 350o and bake 45 minutes longer or until a silver knife inserted into the center comes out clean.  Cool. Chill. Serve with whipped cream.

Sweet Potato Pie
Yields: 2 - 8" pies or 1- 9" deep dish pie

Ingredients:

pastry for 1 crust pie
1-1/2 cups sugar
3 eggs
1-1/2 cup mashed sweet potato
1 teaspoon vanilla flavoring
1 stick butter
1 small can evaporated milk (2/3 cup)
Cream eggs and sugar. Add sweet potato, vanilla flavoring and melted
butter.
Last, add milk. Mix well. Put in unbaked pie shell. Bake for 1 hour at 350
degrees Fahrenheit.

  2        Tablespoons  Unsalted Butter -- softened
  3              Large  Eggs
  2              Large  Egg Yolks
  1                Cup  Sugar
     1/2      Teaspoon  Nutmeg -- grated
     1/4      Teaspoon  Salt
  3        Tablespoons  Bourbon
  1         Tablespoon  Molasses
  1           Teaspoon  Vanilla Extract
     2/3           Cup  Whole Milk
     1/4           Cup  Dark Brown Sugar
  1                     Prepaked Pie Crust (steingartens)
                        Brandied Whip Cream

Partially prebake the pie crust and allow to cool

Preheat oven to 400Fwith rack in middle

Prick sweet potatoes with a fork

Bake uncovered until tender, 40-50 minutes.

Reduce oven to 350F

Halve each potato and scoop out the flesh.

You should have 2 cups of sweet potato flesh.

While the potatoes are still hot, add butter and mash with a fork or wooden
spoon. Small lumps of potato should remain

Whisk together eggs, yolks, sugar, nutmeg and salt in a medium bowl.

Stir in bourbon and molasses and vanilla

Whisk in milk

Gradually add egg mixture to sweet potatoes, whisking gently to combine

Heat partially baked pie shell in oven until warm, about 5 minutes

Sprinkle bottom of pie evenly with brown sugar

Pour sweet potato mixture into pie shell over brown sugar layer.

Bake until filling is set around edges but center jiggles slightly when
shaken, about 45 minutes

Transfer pie to wire rack, cool to room temperature, about 2 hours.

Serve with whip cream
